For about three decades I've been on a quest to discover...to really pin down...the essence of Canadian cuisine. For years it seemed to be a moving target. Now, finally, I've eaten and traveled widely enough to share insights and tastes and experiences. My education was like so many others, through sometimes-raw, sometimes star-blessed experience. I have come to the realizaton that there's no mystery to cooking. Great cooks listen to their hearts. Eating Canada at Stadtlander's Farm
This gathering of the Canadian Chefs Congress was an historic event and we all knew it. Registration closed early...there were just too many people who wanted to go. Unlike the usual foodie gatherings, Michael and Nobuyo Stadtlander opened their free form farm near Singhampton, Ontario, to the professional food community of Canada.

It was like opening Michael's personal Roladex.
Remi Cousyn from Saskatoon...JK from Toronto/PEC ... Pierre LePage from the NWT who I later saw at Gordon Bailey's new place in Charlottetown. Carson Schiffhorn from Inn on the Lake in the Yukon came as did the passionate, foraging New Brunswicker Chris Aerni of Rossmount Inn. His herring was THE hit of the entire event. Vikram Vij of Vancouver teamed up with Stratus's own Charles Baker who spent a good bit of time serving his fabulous wine and'resting' .
Only at Stadtlanders would one find ribs cooked on a manure spreader...!
And it ended with a rip roaring...bonfire that leaped high, high, high into the night sky.

In September 2012, it's going to be in Wolfville, Nova Scotia....we all saving air miles furiously.
